From Soot's oven · Easy apple pie with a woven top
Plum keeps the lanterns lit and the pies latticed. The weaving is the whole fun of it — over, under, over, under, all the way across.
Serves 8 · 1 hour 15 minutes
Warm the oven to 375°F (190°C).
Toss the apples with the sugar, flour, cinnamon and lemon until every slice is coated.
Lay one crust in the pie dish and pile the apples in. Dot the butter over the top.
Cut the second crust into strips about a thumb wide.
Weave the strips: lay half one way, then thread the rest over, under, over, under. Pinch the edges shut.
Bake 45–55 minutes, until the lattice is gold and the filling bubbles at the seams. Let it rest before slicing.
Pip's job: the weaving. Over, under, over, under — and pinching the edge all the way round.
Grown-up job: the peeling knife and the oven.
"Plum says a lattice is just a lot of small strips agreeing to hold something up. Sounds like a village to me." — Soot
